Food processors are multipurpose motor-driven appliances used for chopping, puréeing, or mixing large quantities of ingredients, for rapid blending of sauces, and for kneading doughs. Especially when puréeing, use a standard- or large-capacity model fitted with the metal blade, and process in several batches to avoid splattering. Be careful not to overprocess solid ingredients, as they tend to liquefy in a food processor. Other standard attachments include a plastic blade for mixing and kneading dough, a slicing disk, and a shredding disk. Other specialized attachments can be purchased.
