Kitchen twine is used for trussing whole chicken or whole turkey before roasting or poaching, for tying stuffed and rolled slices of meat, and for holding larger cuts in compact shapes for even cooking. Look for linen kitchen twine; it withstands intense heat with minimal charring. Kitchen twine or white thread can be used to make a bouquet garni or spice sachet, which holds herbs and seasonings or spices in a cheesecloth (muslin) bag.
