Sharpening steels are rod-like, hand-held tools used to keep a knife constantly sharp. A knives' razor edge is preserved by running the blade across the steel at a slight angle periodically during use. Although steels cannot sharpen a dull knife, they are invaluable in maintaining a sharp edge. Choose from steels that are 8 to 12-inches long.
