Bitters are infusions or liqueurs made from plants of several different classes. The stimulating bitters, or aperitifs, are perhaps most common. The plants in this category are wormwood, gentian, germander, hops and also the peel of bitter oranges. They are also used as a digestive aid or appetite stimulant.
