Dried cherries are ripe, tart red cherries that have been pitted and dried in a kiln, with a little sugar to help preserve them. In consistency and shape, dried cherries resemble raisins. Sun-dried cherries are also available. Tightly wrapped dried cherries last for months in the refrigerator or freezer.
