Guajillo chiles, a type of dried chile, are long, tapered, deep orange-red chiles with a sharp, slightly sweet, mildly hot taste.

To handle guajillo chiles:
Wear kitchen gloves to prevent any cuts or abrasions on your hands from contacting the volatile oils.
