Hot peppers or chiles come in a variety of sizes, colors and heat levels. Large chiles tend to be mild while small chiles are much hotter because, proportionally, they contain more seeds and veins. The seeds contain most of a chile's capsaicin, which gives chiles their fieriness. Hot peppers are available fresh or dried. Dried can be purchased year-round and are usually more flavored and darker in color than fresh.
