Kimchee is a Korean condiment that is served with almost every meal. It is made from fermented vegetables, usually cabbage, that are seasoned with garlic, chiles, ginger, green onions and other spices. The vegetables are pickled before being stored in tightly sealed pots or jars. Kimchee can be purchased in Korean markets and will store indefinitely in the refrigerator.
