Lima beans are flat, greenish white kidney-shaped beans with a mild flavor and a soft texture. They are sold fresh in the shell, or shelled and dried or frozen. Baby lima beans are also available.

To shell fresh lima beans:
Break the stem and pull down to remove the string and open the pod.
