Mustard is available as whole seeds; powdered, which is often referred to as dry mustard; and prepared, which is made from powdered or coarsely ground mustard. Pale, hot, and sharp-tasting Dijon mustard is made in Dijon, France, from powdered dark brown mustard seeds. Non-French blends are labeled "Dijon-style." Mild coarse-grained mustards, containing roughly ground seeds, have a granular texture. A bright yellow, sharp-tasting, more fluid paste seasoned with turmeric, vinegar, white wine, and sugar, is sometimes called ballpark mustard.
