Pine nuts are small, ivory-colored seeds extracted from the cones of a species of pine tree. They are appreciated for their rich, slightly resinous flavor. Pine nuts are used whole as an ingredient or a garnish, or are puréed as a thickener.
To toast pine nuts:
Spread the nuts on a baking sheet and place in a preheated 325°F (165°C) oven. Toast, shaking the sheet occasionally, until the nuts just begin to change color and are fragrant, about 3 minutes. Remove from the oven and let cool to room temperature. For other nut varieties, see almonds, Brazil nuts, candlenuts, cashews, chestnuts, hazelnuts, macadamia nuts, peanuts, pecans, pistachios, and walnuts.
