Puff pastry is a light, flaky made by repeatedly layering pastry dough and butter or another solid fat to form a thin dough that puffs in the oven. Although many types of puff pastry have been made by hand in France for centuries, commercially manufactured frozen varieties are now also available. Puff pastry is also known as pâte feuilletée or feuilletage.
