Red snapper is a saltwater fish with lean, mild-flavored, flaky white flesh. Red snapper fillets are available fresh or frozen. Fresh fillets may still have the red skin attached.
To test fish for doneness:
Slit the fillet or whole fish at the thickest part with the tip of a small, sharp knife.
