Sushi rice is usually made with short-grain rice. This type of rice has a fat, almost round shape that has a higher starch content than the medium- or long-grain rice. When cooked, it becomes quite moist and viscous, causing the rice to stick together. This type of rice is also called glutinous rice or pearl rice. Short-grain rice is available in Asian markets and most supermarkets.
