Vinegar, meaning literally "sour wine," results when wine or another alcoholic liquid is allowed to ferment a second time, turning it acidic.

Any vinegar will highlight the qualities of the alcoholic liquid from which it has been made. When the sharp acidity of vinegar is desired without any particular character, use distilled white vinegar. Vinegar lasts indefinitely, but it is best to store it away from light and heat. For other types of vinegar, see balsamic, champagne, Chinese red, cider, red wine, rice, sherry, and white wine vinegars.
