White potatoes are medium-sized tuberous vegetables with thin tan skins and a texture finer than that of baking potatoes but somewhat coarser than that of red potatoes. They are a good all-purpose choice for cooking. Choose firm, well-shaped potatoes, without sprouts or a greenish cast. Store in a dark, dry place for several weeks.
