This French goat cheese and garlic sauce is perfect served over boiled or baked potatoes or as a dip for vegetables.
INGREDIENTS (for 6 servings):
- 2 cloves garlic, minced
- 1/2 cup goat cheese
- 1 celery stalk, minced
- 2 tablespoons balsamic vinegar
- 1/2 cup olive oil
- salt and pepper to taste
In a bowl, stir together garlic, goat cheese, celery, balsamic vinegar, and olive oil. Season to taste with salt and pepper. Blend well until the sauce is smooth. Cover, and refrigerate. Serve chilled.
