This is a sweet, creamy pie made with canned carrots, honey, eggs, butter and lots of fragrant spices. It 's very much like a pumpkin pie in texture, but it definitely has a carrot taste. Serve with sweetened whipped cream flavored with candied ginger.
INGREDIENTS (for 8 servings):
- 1 (15 ounce) can carrots, drained
- 1/4 cup butter
- 1/4 cup honey
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon salt
- 1 recipe pastry for a 9 inch single crust pie
Combine carrots, butter, honey, vanilla extract, salt, eggs and spices in a mixing bowl. Mix together thoroughly with an electric mixer; mix until smooth. Fold in white and brown sugars. Pour filling into pastry crust.
Bake at 350 degrees F ( 175 degrees C) for 50 to 60 minutes. To determine if pie is done, insert toothpick. If it comes out clean it is ready.
