This bread 's date flavors gain depth and complexity with melted chocolate chips. Best made a day ahead.
INGREDIENTS (for 1 servings):
- 1 cup dates, pitted and chopped
- 3/4 cup boiling water
- 1 teaspoon baking soda
- 1 egg
- 1/2 cup white sugar
- 3/4 teaspoon salt
- 1 teaspoon vanilla extract
- 3/4 cup semisweet chocolate chips, melted
- 1/4 cup butter, melted
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup chopped walnuts
Combine chopped dates, boiling water, and soda. Stir, and allow to cool.
Whisk together flour, baking powder, and nuts.
In a large mixing bowl, beat together egg, salt, sugar, and vanilla. Blend together melted chocolate and melted butter or margarine; stir into batter. Stir in date mixture. Add flour mixture, and stir to mix. Scrape into a greased 9 x 5 inch loaf pan.
Bake at 350 degrees F (175 degrees C) for 1 hour, or until it tests done. Cool in pan 10 minutes. Remove from pan.
