Are you ready to walk on the wild side? Try this spicy saute of pepperoni, capers, olives, onions, garlic, tomatoes and mushrooms tossed with hot pasta and sprinkled with mozzarella cheese.
INGREDIENTS (for 6 servings):
- 2 tablespoons olive oil
- 1 clove garlic, crushed
- 1 onion, diced
- 1 large tomato, cubed
- 1 cup kalamata olives, pitted and chopped
- 1/3 cup sliced pepperoni sausage, cut into strips
- 1/2 cup sliced fresh mushrooms
- 2 tablespoons capers
- salt and pepper to taste
- 1 pound pasta
- 1 cup smoked mozzarella cheese, cubed
In a large skillet heat the olive oil over medium high heat. Add the garlic and onion and saute until translucent.
Add the tomato, olives, pepperoni, mushrooms, capers and salt and pepper to taste and simmer until heated through.
Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Add warm sauce to pasta and sprinkle with mozzarella cheese; mix well and serve immediately.
