Here is a homemade dry pancake mix that can be used for many pancake recipes. It should be stored in the refrigerator in an airtight container. Combine 1 1/3 cup of dry mix with 3/4 cup water and 1 egg.
INGREDIENTS (for 1 servings):
- 6 cups all-purpose flour
- 2 tablespoons baking powder
- 1 tablespoon salt
- 1 cup dry milk powder
- 1 cup shortening
PREPARATION:
In a large bowl, mix together flour, baking powder, salt and dry milk. Cut in shortening until mixture resembles coarse cornmeal.
