These colored coconut bon bons can be adjusted to suit any occasion. Using any flavor of gelatin, the possibilities are unlimited.

INGREDIENTS (for 6 servings):


  • In large mixing bowl, combine EAGLE BRAND, coconut, 1/3 cup gelatin, almonds, extract and enough food coloring to tint mixture desired shade. Chill 1 hour or until firm enough to handle. Using about 1/2 tablespoon mixture for each, shape into 1-inch balls. Sprinkle remaining gelatin onto wax paper; roll each ball in gelatin to coat. Place on wax paper-lined baking sheets; chill. Store covered at room temperature or in refrigerator.

  • Variation:

    STRAWBERRY BON BONS: Using strawberry flavor gelatin, prepare bon bon mixture as above. Form into strawberry shapes. In small bowl, combine 2 1/4 cups sifted confectioners' sugar, 3 tablespoons whipping cream and a few drops green food coloring (or use green tube decorator icing). Using pastry bag with open star tip, pipe small amount on top of each strawberry.
