Imagine a luscious, rich pecan pie. Now imagine that pie with shredded coconut and golden raisins, and you 've conjured up this sweet, gooey gardenia pie. It 's absolutely irresistible when served with whipped cream or rum raisin ice cream.
INGREDIENTS (for 8 servings):
- 1 cup white sugar
- 1/4 teaspoon salt
- 2 eggs
- 2 tablespoons distilled white vinegar
- 1 tablespoon unsalted butter, melted
- 1/2 cup chopped pecans
- 1/2 cup golden raisins
- 1/2 cup flaked coconut
- 1 (9 inch) pie shell
PREPARATION:
Preheat oven to 325 degrees F (175 degrees C).
In a large bowl, combine sugar, salt, eggs, vinegar and melted butter. Beat well. Fold in pecans, raisins and coconut.
Pour into unbaked pie shell. Bake on lower rack in oven at 325 degrees F (165 degrees C) for 30 minutes. Top should brown lightly.
Store in refrigerator.
