Two things are great about this chicken salad. - the texture and the mayonnaise/coleslaw dressing with its splash of lemon. Everything goes into the food processor and when it emerges, it only needs a bit of salt and pepper to taste. Make tea sandwiches,
INGREDIENTS (for 2 servings):
- 2 cooked, boneless chicken breast halves, chopped
- 1/4 cup mayonnaise
- 4 tablespoons cole slaw dressing
- 1/2 lemon, juiced
- 1 stalk celery, chopped
- salt and pepper to taste
In a food processor, combine the chicken, mayonnaise, coleslaw dressing, lemon juice and celery.
Blend until well mixed. Season with salt and pepper to taste and refrigerate until chilled.
