Homemade chocolate pudding is layered with sweet strawberry whipped cream and chilled in this colorful dessert.
INGREDIENTS (for 8 servings):
- 1 cup white sugar
- 1/4 cup HERSHEY®'S Cocoa Powder
- 1/3 cup cornstarch
- 1/4 teaspoon salt
- 3 cups milk
- 3 egg yolks, beaten
- 2 tablespoons butter
- 1 1/2 teaspoons vanilla extract
- 1 (10 ounce) package frozen sliced strawberries in syrup, thawed
- 1 cup heavy cream, chilled
- 1/4 cup confectioners' sugar
Stir together sugar, cocoa, cornstarch and salt in heavy saucepan; stir in milk and egg yolks. Cook over medium-high heat, stirring constantly, until mixture boils; boil and stir 1 minute. Remove from heat; stir in butter and vanilla. Cool.
Drain strawberries; in blender, puree to equal 1/2 cup. In small mixer bowl, beat whipping cream and powdered sugar until stiff; fold in strawberry puree.
In parfait or wine glasses, alternately layer chocolate pudding and strawberry cream, ending with chocolate. Cover; refrigerate until set.
