This smooth, rich sweet pie is spiked with pumpkin pie spice and nutmeg, and baked until golden and delicious. Serve as is or with generous servings of freshly whipped cream.
INGREDIENTS (for 8 servings):
- 1 3/4 cups white sugar
- 1 tablespoon all-purpose flour
- 1/2 teaspoon pumpkin pie spice
- 1 pinch ground nutmeg
- 1/2 cup butter
- 4 eggs
- 1 cup milk
- 1 tablespoon vanilla extract
- 1 recipe pastry for a 9 inch single crust pie
Mix together the sugar, flour and spices. Stir in butter. Beat in eggs and add milk and vanilla. Mix well.
Pour into unbaked pie shell. Bake 10 to 15 minutes at 400 degrees F (205 degrees C), then reduce heat to 350 degrees F (175 degrees C) and bake 30 minutes more or until pie sets.
