A quick way to make a traditional favorite of Florida. Cool tart and refreshing key lime pie is delicious any time.
INGREDIENTS (for 1 servings):
- 2 cups vanilla wafers
- 1 cup slivered almonds
- 1/3 cup real butter, melted
- 2 (3 ounce) packages cream cheese, softened
- 1/4 cup real butter, softened
- 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
- 1/3 cup lime juice
- clear plastic wrap
- lime wedges
- lime curls
- thawed whipped topping
In food processor bowl, add vanilla wafers and process until ground. Add almonds; process coarsely ground. Transfer to a large bowl; add 1/3 cup melted butter and stir well. Press crumb mixture on bottom and up sides of a 9-inch pie plate. Bake at 350 degrees for 10 minutes or until lightly browned; cool.
In clean food processor bowl, add cream cheese and remaining 1/4 cup butter. Cover and process until fluffy, scraping sides of bowl as necessary. Add EAGLE BRAND® and lime juice; cover and process until blended, scraping bowl as necessary.
Pour mixture into pie plate; cover with plastic wrap and refrigerate at least 4 hours. Garnish if desired.
If you do not own a food processor, use a blender to prepare the crust, and an electric mixer to prepare the filling.
