Key Lime Pie with Real Butter

A quick way to make a traditional favorite of Florida. Cool tart and refreshing key lime pie is delicious any time.

INGREDIENTS (for 1 servings):


  • In food processor bowl, add vanilla wafers and process until ground. Add almonds; process coarsely ground. Transfer to a large bowl; add 1/3 cup melted butter and stir well. Press crumb mixture on bottom and up sides of a 9-inch pie plate. Bake at 350 degrees for 10 minutes or until lightly browned; cool.
  • In clean food processor bowl, add cream cheese and remaining 1/4 cup butter. Cover and process until fluffy, scraping sides of bowl as necessary. Add EAGLE BRAND® and lime juice; cover and process until blended, scraping bowl as necessary.
  • Pour mixture into pie plate; cover with plastic wrap and refrigerate at least 4 hours. Garnish if desired.

    If you do not own a food processor, use a blender to prepare the crust, and an electric mixer to prepare the filling.
