This savory beef pie is so easy to make and is one of my husband's favorites. The leftovers are perfect for lunch the next day. For added flavor, you could top the potatoes with a cup of shredded Cheddar cheese, if desired.
INGREDIENTS (for 5 servings):
- 3 potatoes, peeled and cubed
- 1 large onion, diced
- 1 green bell pepper, chopped
- 1 pound lean ground beef
- 2 tablespoons margarine
- 1/4 cup milk
- 1 (9 inch) unbaked pie shell
- 1 (15 ounce) can cream-style corn
Preheat oven to 350 degrees F (175 degrees C).
Using a large pot or saucepan, boil the potatoes for 15 minutes, or until tender. Drain and set aside.
In a medium skillet over medium heat, saute the onions, green bell pepper and ground beef for 5 to 10 minutes, or until beef is browned; drain excess fat. Mash the potatoes, add the margarine and milk and stir well until smooth.
Place the beef and onion mixture into the bottom of the pie shell, pour the cream-style corn over the beef mixture, and then top this with the mashed potatoes.
Bake at 350 degrees F (175 degrees C) for 30 minutes, or until the pie crust is golden brown.
