This lovely recipe makes two pies, so it 's perfect for delighting a small crowd. And it couldn't be easier. Eggs, sugar, evaporated milk, vanilla, cornstarch and butter are stirred together, poured into waiting crusts, sprinkled with coconut, and baked.
INGREDIENTS (for 1 servings):
- 4 eggs
- 1 (3.5 ounce) package flaked coconut
- 1 (12 fluid ounce) can evaporated milk
- 1 1/2 cups white sugar
- 2 teaspoons cornstarch
- 1/2 cup butter, melted
- 1 teaspoon vanilla extract
- 1 recipe pastry for a 9 inch single crust pie
PREPARATION:
Blend the eggs, sugar, and cornstarch. Add the melted butter, milk, and vanilla; stir well. Divide filling into pie shells. Sprinkle with coconut.
Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes, or until firm.
