Steamed potatoes and carrots are tossed with herbed lemon butter. You could toss any steamed veggies with this flavored butter.
INGREDIENTS (for 6 servings):
- 6 potatoes, unpeeled and chopped
- 1/2 pound baby carrots
- 6 tablespoons butter, melted
- 1/4 cup lemon juice
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon Italian seasoning
PREPARATION:
Place potatoes and carrots in a steamer over boiling water, and cover. Cook until tender but still firm, about 15 minutes.
To the melted butter add the lemon juice, salt, pepper and Italian seasoning. Pour over potatoes and carrots and toss.
