In a hurry? Try Libby's Easy Pumpkin Pie Mix, a can of evaporated milk and an unbaked pie shell. Stir in 2 eggs and pop it into the oven and you'll have a home baked pie in no time.
INGREDIENTS (for 8 servings):
- 1 (9 inch) unbaked (4-cup volume) deep-dish pie shell
- 2 large eggs
- 1 (30 ounce) can LIBBY'S® Easy Pumpkin Pie Mix
- 2/3 cup NESTLE® CARNATION® Evaporated Milk
PREPARATION:
PREHEAT oven to 425 degrees F.
BEAT eggs lightly in large bowl. Stir in pumpkin pie mix and evaporated milk. Pour into pie shell.
BAKE for 15 minutes. Reduce temperature to 350 degrees F. Bake for 50 to 60 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. (Do not freeze as this may cause filling to separate from crust.)
NOTE: If using metal or foil pan(s), bake on preheated heavy-duty baking sheet(s).
