This recipe was given to my mother-in-law years ago by a friend. It is my all-time favorite salad.
INGREDIENTS (for 1 servings):
- 2 eggs
- 4 tablespoons all-purpose flour
- 2 (20 ounce) cans pineapple chunks
- 2 cups diced sharp Cheddar cheese
- 2 cups miniature marshmallows
- 1 cup chopped pecans
Beat eggs and flour with the pineapple juice reserved from the cans of chunk pineapple. Cook over medium low heat until it thickens to gravy consistency. Let cool.
Mix together the cheese, marshmallows, drained pineapple chunks, and pecans. Pour dressing over and stir. Refrigerate.
