Gooey, sweet and wonderful, this oatmeal pie is hard to resist. Sugar, eggs, butter, cornstarch and oatmeal are combined, poured into a pie crust and topped with luscious, white coconut. Bake, cool and serve this mock-pecan pie with whipped cream.
INGREDIENTS (for 8 servings):
- 2 eggs
- 3/4 cup white sugar
- 1 cup butter, melted
- 3/4 cup dark corn syrup
- 3/4 cup quick cooking oats
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 3/4 cup flaked coconut
- 1 recipe pastry for a 9 inch single crust pie
PREPARATION:
In a medium bowl, beat the eggs well. Stir in sugar, butter or margarine, corn syrup, oatmeal, vanilla, and salt. Pour mixture into the pie shell, and top with coconut.
Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes. Cool before serving.
