Coconut, corn syrup, evaporated milk and oatmeal whip up into a lovely filling that is spooned into a prepared pie crust and baked. Everyone will think it 's a pecan pie!
INGREDIENTS (for 1 servings):
- 4 eggs
- 1 cup flaked coconut
- 1 1/2 cups dark corn syrup
- 1 1/2 cups white sugar
- 1/2 cup margarine, melted
- 1 3/4 cups rolled oats
- 1 3/4 cups evaporated milk
- 1 recipe pastry for a 9 inch single crust pie
Mix eggs, corn syrup, and sugar. Add milk, melted margarine, coconut, and oatmeal. Pour into two 9-inch pie shells.
Bake at 350 degrees F (175 degrees C) until brown.
