Chicken and broccoli luxuriate under a heavenly sherried cream sauce.
INGREDIENTS (for 4 servings):
- 2 heads broccoli, cooked and cut into florets
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1/2 cup heavy cream
- 3 tablespoons sherry
- 1/2 teaspoon salt
- 1 pinch ground black pepper
- 2 skinless, boneless chicken breast halves - cooked and sliced
- 1/4 cup grated Parmesan cheese
Melt butter or margarine in a small saucepan over low heat. Stir in flour; add chicken broth and stir until thick. Then stir in cream, sherry or wine, salt and ground black pepper. Remove from heat.
Preheat oven to 350 degrees F (175 degrees C).
Place broccoli crosswise in a 9x13 inch baking dish. Pour 1/2 of the cream sauce over the broccoli and top with chicken slices. Add cheese to the remaining sauce, mix together and pour this mixture over the chicken slices. Sprinkle top with extra cheese, if desired.
Bake at 350 degrees F (175 degrees C) for 20 minutes until heated through, then broil until top is golden.
