Rice wine vinegar imparts a delicate sweetness to chicken and ramen salad dressed with soy sauce and peanut oil.
INGREDIENTS (for 2 servings):
- 1/2 cup diced cooked chicken breast meat
- 2 tablespoons soy sauce
- 3 tablespoons rice vinegar
- 1 1/2 tablespoons white sugar
- 1/2 cup peanut oil
- 3 green onions, minced
- 1 (3 ounce) package ramen noodles - cooked, drained and chilled
In a small bowl combine the soy sauce, vinegar, sugar and peanut oil.
In a medium sized bowl toss the dressing with the chicken, scallions and noodles. Chill and serve.
