A mixture of pineapple, flour, butter eggs and cinnamon. Excellent side dish with ham or pork roast. My In-laws are from Pennsylvania. This recipe is from of the Aunts that live there. A Christmas dinner must-have.
INGREDIENTS (for 6 servings):
- 1/4 cup butter, melted
- 1/4 cup all-purpose flour
- 4 eggs, beaten
- 1 cup white sugar
- 1 (20 ounce) can crushed pineapple, in juice
- 1 pinch ground cinnamon
PREPARATION:
Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together the butter, flour, eggs and sugar until well blended. Stir in the crushed pineapple. Transfer to a small casserole dish, and sprinkle cinnamon over the top.
Bake for 1 hour in the preheated oven, uncovered. Serve warm.
