Delicious muffins that pack a real protein punch.
INGREDIENTS (for 2 servings):
- 2 cups powdered protein supplement
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons salt
- 2 teaspoons ground nutmeg
- 2 teaspoons ground cinnamon
- 1 cup white sugar
- 1 cup vegetable oil
- 1 1/2 cups applesauce
- 2 eggs
- 2 egg whites
- 1 (15 ounce) can canned pumpkin puree
- 1/2 cup water
- 1 cup chopped walnuts
Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
In a large bowl, stir together protein powder, flour, salt, nutmeg, cinnamon and sugar. Add oil, applesauce, eggs, egg whites, pumpkin and water; stir well. Fold in walnuts. Spoon batter into prepared muffin cups.
Bake in preheated oven for 16 minutes, or until a toothpick inserted into center of each muffin comes out clean.
