It tastes like you spent hours stirring and baking, but all the yummy ingredients -pumpkin, sugar, eggs, milk and spices -are simply blended in a bowl, and then poured into a pastry-lined pie shell. It bakes up golden and delicious.
INGREDIENTS (for 8 servings):
- 1 (9 inch) pie shell
- 2 cups solid pack pumpkin puree
- 1/2 cup white sugar
- 2 eggs
- 1 cup evaporated milk
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1 pinch ground cloves
- 1 pinch ground nutmeg
PREPARATION:
Preheat oven to 350 degrees F (175 degrees C).
In a large mixing bowl combine pumpkin, sugar, eggs, milk, cinnamon, ginger, cloves, and nutmeg. Stir until smooth and thoroughly mixed. Pour pumpkin mixture into pastry-lined pie pan.
Bake in preheated oven for 45 minutes, or until set in center.
