To turn shrimp easily, use stainless steel, flat-bladed skewers. Round skewer often create large holes, causing the food to slip instead of turn.
INGREDIENTS (for 3 servings):
- 2 pounds unpeeled jumbo fresh shrimp
- 1/2 cup lime juice
- 1/3 cup olive oil
- 2 tablespoons chopped fresh cilantro
- 1 clove garlic, minced
- 1 jalapeno pepper, seeded and chopped
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
PEEL shrimp, leaving tails intact, and devein, if desired. Combine lime juice and remaining ingredients; pour over shrimp.
COVER and chill 2 hours. Remove shrimp, discarding marinade. Thread shrimp on skewers.
GRILL, without grill lid, over medium-hot coals (350 to 400 degrees) 3 minutes on each side or until done.
