INGREDIENTS (for 2 servings):
- 2 cups small shrimp, cooked and shelled
- 1 scallion, chopped
- 1/2 cup mayonnaise
- 1 tablespoon ketchup
- 1 tablespoon dill pickle relish
Make dressing by mixing well the mayonnaise, ketchup and relish.
Toss shrimp, scallions and dressing. Chill and serve.
Check your labels when choosing your relish. Avoid sweet pickle relishes which are high in carbs. Your dill pickle relish should be 1g carb per tablespoon or less.
