Kids love these soft cookies full of tart, crunchy candies! I used to take them to school with me when I was little and they would disappear. Thanks Mom!
INGREDIENTS (for 3 servings):
- 1 cup shortening
- 1 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups candy-coated chocolate pieces
Preheat the oven to 375 degrees F (190 degrees C).
In a large bowl, cream together the shortening, brown sugar, and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Combine the flour, baking soda and salt; gradually stir into the creamed mixture. Finally, stir in the Smarties ™. Drop by rounded spoonfuls onto the prepared cookie sheet.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
