Frozen strawberries make it possible to enjoy this sweet, quick bread year-round. A shot of cinnamon and a scattering of crunchy pecans round out the flavors.
INGREDIENTS (for 1 servings):
- 3 cups all-purpose flour
- 2 cups white sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1 teaspoon baking soda
- 4 eggs
- 1 1/4 cups vegetable oil
- 1 cup chopped pecans
- 1 (10 ounce) package frozen strawberries, thawed
Grease and flour a 9 x 5 inch pan well. Preheat oven to 350 degrees F (175 degrees C).
In a large mixing bowl, sift together sugar, flour, cinnamon, salt, and baking soda.
In a smaller bowl, beat the eggs and oil. Stir in pecans and strawberries. Add egg mixture to the sifted ingredients, and stir until just combined.
Bake for 1 hour, or until tester inserted in the center comes out clean.
