This colorful side dish is flavored with brown sugar, caraway seeds, and vinegar, and is traditionally served as part of a Swedish smorgasbord.
INGREDIENTS (for 4 servings):
- 1 medium head red cabbage, shredded
- 1 quart water
- salt to taste
- 1/2 cup brown sugar
- 1 tablespoon caraway seeds
- 1/2 cup vinegar
- 1/4 cup butter
Place cabbage in a medium saucepan with water and salt, and bring to a boil. Stir in brown sugar and caraway seeds. Cook 12 minutes, or until cabbage is tender; drain.
In a medium bowl, toss cabbage with vinegar and butter until thoroughly coated.
