Tofu and olive oil are mixed together until thick and creamy. Then a whole parcel of herbs - parsley, rosemary, basil, and tarragon - are stirred in, with vinegar and soy sauce to taste.
INGREDIENTS (for 1 servings):
- 1 (10 ounce) package soft silken tofu
- 1/3 cup olive oil
- 1/4 cup chopped fresh basil
- 1/2 teaspoon rice vinegar
- 1/4 teaspoon salt
- 3 teaspoons tamari
Whisk together the tofu and olive oil until a thick mayonnaise like consistency is reached.
Add the herbs, vinegar, salt and soy sauce; mix well and refrigerate.
