Place an artichoke on its side on a cutting board. With a sharp knife, trim off the stem flush with bottom of the artichoke.
Snap off any small, loose, or discolored outer leaves. With a sharp knife, slice off about 1 in (2.5 cm) of the top in an even piece.
Trimming Leaf Tips
Cut off the sharp leaf tips with kitchen scissors. Cut them straight across, or at an angle for a more decorative effect.
