f you can’t find wild pecan rice (a regional grain from Louisiana), use long grain rice instead and add pecans to the stuffing to give it a similarly nutty flavor.
Skewering Neck
Loosely fill the neck cavity with prepared stuffing. Close off by pulling the neck skin over the opening and securing it to the back with a small metal skewer.
Stuffing Body
Spoon the stuffing into the body cavity. Fill the cavity, but don’t pack it with stuffing, as the mixture will expand during roasting. When the drumsticks are tied together, they will cover the exposed stuffing.
