Molding Ice Cream
Spoon ice cream into a 1/3-cup measure. Pack down so the ice cream forms a solid disk without air holes.
Unmold ice cream onto the flat bottom of a cookie. Top ice cream with another cookie, flat-side down.
Tightly wrap each sandwich in plastic wrap. Store in an airtight container and freeze until solid.
