Go meatless with a patty that looks like pure beef but is made with lentils. A member of the legume family and a good source of protein, lentils have a mild, nutty flavour and a rich, meaty texture.

Making Patties
Put the puréed lentil mixture in a bowl. With a wooden spoon, stir in wheat germ, bread crumbs, tahini, garlic, and salt, then mix to combine thoroughly.

Shaping Patties
Pick up one quarter of the mixture with your hands. Pat and shape into a patty that is about 1/2 in (12 mm) thick. Repeat with remaining lentil mixture.

Thickening Sauce
Once the margarine or butter is melted, and the flour, pepper, and milk stirred in, stir over medium heat until thickened and bubbly.
