Cutting Out a Fish
Use parchment paper or clean brown paper to make a pattern. Lay the pattern on the pastry and cut around it with a knife.
Making Fins
Reroll dough scraps and cut out pieces for fins. Brush with water and press onto the fish. Press into the cutouts with the back of a knife to make ridges.
Adding Scales
Use a half-moon-shaped hors d'oeuvre cutter with sharp edges. Make scales by pressing into the dough with the outward curving edge of the cutter; do not press through the dough.
